The flavour, texture and colour of pure honey is determined by the available flora alongside the timing of the honey harvest therefore no honey has been made equal. Honey of varying textures and floral notes are produced by undertaking harvests at different points during the year. Pure unpasteurised honey will set over time therefore our local honey can arrive runny or set depending on the time of year.

All of the honey sold across our website is unpasteurised in order to preserve the natural goodness of the honey. This ensures the preservation of the natural proteins, vitamins and minerals as nature intended. Pure honey it is as natural as it gets – This is true of the honey produced by our own bees at our apiaries or our specially selected range of honey from around the world.

How it’s made:

This local Cambridgeshire honey is harvested from the hives at our Water Newton apiary. Once we remove the frames filled with pure golden honey from our hives they are taken to be processed straight away. The thin layer of beeswax, known as wax cappings, are removed by a sharp knife releasing the free flowing pure honey. The pure delicate honey now free flowing from the frames are slotted down into a honey extractor. Using centrifugal force the unpasteurised honey is spun and subsequently forced out onto the side of the extractor. After a period of time the honey settles to the bottom of the extractor it is then filtered to remove any debris such as beeswax whilst ensuring the natural grains of pollen remain, retaining the nutritional benefits.
